Amazing Monocultivar from Carboncella, the very local olive to Alta Sabina, this oil is delicately nutty on the nose at first, developing into very grassy notes with a hint of artichoke. Medium mouth-filling, hazelnut and fresh meadow on the palate with a gentle spicy finish. It is the perfect touch on legume and vegetable soups and pairs amazingly with fattier and rich meats like a rib eye or a rack of grass-fed lamb.
